Facilities is the largest vendor ecosystem around restaurants and the least written about. It is also the one where the brand on the contract is most often not the company that turns up: several of the biggest names here are federations of regional service companies rather than single national operators.
That structure is the reason this page leads with a layer diagram rather than a grid of logos. Knowing that an aggregator sits between the operator and the technician is worth more than knowing another vendor name, because it tells you who actually signs and who actually serves.

The channel
Nobody in this chain sells straight to the restaurant.
The brand on the contract is rarely the company holding the wrench. An operator signs a chain-wide agreement with an aggregator, who dispatches through a regional network, who sends a technician who may work for none of them. Several of the largest names here are federations of regional companies rather than single national operators — which is why this market cannot be read as a list of logos.
