Distribution is the least software-like world in Restaurant B2B and the one outsiders get wrong most often. Product does not go from a manufacturer to a restaurant. It passes through brokers, distributors and a rep carrying hundreds of accounts, and each hand-off is a separate commercial relationship with its own sales motion.
The top of this market is four companies you already know. The interesting part is everything around them — the brokers who decide what a distributor carries, the buying groups that pool volume against manufacturers, and the software layer selling to distributors themselves, which is fragmented enough that most vendors in it cannot name their own competitors.
The channel
Nobody in this chain sells straight to the restaurant.
Each arrow is a separate commercial relationship with its own sales motion. A manufacturer selling through a broker into a distributor is not selling to the restaurant at all — but still needs to know which restaurants exist and which distributor serves them.

- Distributor sales rep. Carries a territory of restaurant accounts for a distributor; the person who physically visits the operator.
- Broadline distributor
- Carries a wide catalog across categories, as opposed to a specialty distributor focused on one.
- Broker / manufacturer rep
- An independent firm that represents manufacturers' products to distributors and operators, paid on commission.
- GPO
- Group purchasing organization. Negotiates pricing on behalf of many operators at once.

What is genuinely hard to find written down is how the channel works — what a DSR actually does, why a broker sits between a manufacturer and a distributor, what a GPO is for.
