Manufacturers do not sell to restaurants. They sell through rep firms who carry their lines into a territory, dealers who quote and install, and service companies who inherit the account for years afterwards. Four different companies prospect the same restaurant for different reasons, on different timelines.
The design consultant is the node almost nobody maps, and the most powerful one. They write the equipment specification — which means the manufacturer is chosen before a dealer ever produces a quote, and often before the restaurant has a floor.
The channel
Nobody in this chain sells straight to the restaurant.
The consultant specifies, the dealer sells, the rep firm carries the manufacturer's line, and the service company inherits the account for years afterwards. Each of them prospects the same restaurants for different reasons.
