Orange and Green Lentil Soup Nov 16, 2018
sanaacooks · Gluten Free · Soups · Vegan · Vegetarian
Monday and Tuesday are lentil soup days at the restaurant. I do make about 10 varieties of lentil soup but I am always on the look for a new way to cook my lentils. On this Monday, I arrived early, chopped my vegetables and started to make one of my Tuscan lentil soup. I seared the vegetables and when I reached to get my lentil I found out that I only have 2 cups of green lentil. Two cups of lentils will be ok if I am cooking at home but this amount will be just enough to get me th… (truncated)

Our Hands Are The Flag of Our Life Journey Aug 29, 2018
sanaacooks · From Sanaa
6AM: this is my wake up time. I open my eyes, roll over to the edge of my bed, sit with my hands on my legs, take a deep breath and mentally prepare for the day. I go over the day’s menu at the restaurant, the errands I need to do, and what I am making for dinner at home. The other day, I looked down at my hands during this morning breath. I couldn’t believe how much they resembled my parents’—hands like my dad and nails like my mom. I couldn’t help but feel happy, horrified, and a… (truncated)

Baby potato and Rainbow Tomato with Curly Endive and Hot Tahini Sauce Aug 13, 2018
sanaacooks · Gluten Free · Salads · Sauces · Vegan · Vegetarian
I believe potatoes are one of the few foods, let alone vegetables, loved by everyone across the globe, and I know many people are like me—I like potatoes fried, baked, mashed, hashed, in gratins, in soups, and in salads. Potatoes are my go-to vegetable at the restaurant for a quick dish which will satisfy even the most picky of tastebuds. At home, no potatoes is a red-alert, must-go-to-the-grocery-store alarm! In the summer, I try to source most of my vegetables from local farms. I… (truncated)

Chef Boot Camp, an Opportunity of Life Time Jun 27, 2018
sanaacooks · From Sanaa
As I was planning my trip to Syria to see my family, I got an invitation from James Beard Foundation to attend chef boot camp. I was so excited!! If you don't know the James Beard Foundation, there essentially the Oscars of delicious, healthy, sustainable food. You see, my restaurant is in South Dakota--which a lot of people think of as a food dessert or a "fly-over state." So, I never thought I would be on anyone's radar, let alone James Beard Foundation (eek!). I had one dilem… (truncated)

sanaacooks · Appetizers · From Sanaa · Gluten Free · Vegan · Vegetarian
Well, I am sure that you know by now that I am on a quest to make as many variety of delicious hummus as my brain and taste bud can. I made orange hummus by using sweet potato, I made green one by using avocado. I used yellow beet for one recipe and red beet for burgundy hummus and cannellini bean for a white hummus. Black hummus still still elude me. I used black beans with coco powder and that did not work. It tasted like soil. So I tried black beans with squid ink. The mix… (truncated)

Arugula and Apple Salad with Butternut Squash and Tahini Dressing Mar 23, 2018
sanaacooks · Gluten Free · Salads · Vegan · Vegetarian
For me anything that starts with arugula has to tastes good. So, whenever I get the chance to use arugula I take it. I am also, always, conscious of textures, flavors, and nutrition. I want my salads to be noisy. Noisy salad equal healthy salad. Like I said our teeth are here for a reason; use them before you lose them.Peel the butternut squash, remove the seeds and then cut into 1/2 inch cubes. Heat the olive oil and saute until cooked but not soft. Add the apples, half of the… (truncated)

Cannellini Beans and Rosemary Hummus Mar 2, 2018
sanaacooks · Appetizers · Gluten Free · Vegan · Vegetarian
I love spreads especially hummus. I wanted to make hummus in several colors without using any artificial colors. So, I used turmeric with beet to create yellow hummus, avocado to make green hummus, sweet potato to make orange hummus, beet to make burgundy hummus, and then... in a moment of madness I used octopus ink to make black hummus. I pureed black beans with octopus ink and that was a total failure. The black hummus looked grayish and smelled awful. I throw the whole thing… (truncated)

Vegan Broccoli and Cheese Soup Jan 26, 2018
sanaacooks · Gluten Free · Soups · Vegan · Vegetarian
I have degree in agriculture engineering and consider myself very knowledgeable about vegetables. But the first time that I saw broccoli was when I came to America. Honestly, I thought it was unripe cauliflower so I avoided eating the broccoli for a while. Of course looking at wilted overcooked broccoli did not help to change my mind. Then one of my classmate invited me to have dinner with her family. Of course being a foreign student far away from my family I looked forward to eat… (truncated)

Mediterranean Gluten Free Vegetable Pasta Salad Dec 8, 2017

In my circle and I am known as the salad lady. Anytime I am invited to a potluck dinner, I am asked to make salad. Most the time I make tabbouli; It is popular salad and no one want to chop 50 punches of parsley except me. My staff and I are famous for being good chopper. Sometimes, and especially when I do not know who else is attending the potluck, I play it safe, and make my Mediterranean vegetable pasta salad.I love textures and colors in everything but especially in sala… (truncated)

sanaacooks · Main Dishes · Vegan · Vegetarian

sanaacooks · Appetizers · From Sanaa · Gluten Free · Spreads · Vegan · Vegetarian
