  • As printed The restaurant business was in the stars for DW Bistro Principal Owner Bryce Krausman. After meeting Chef Dalton Wilson in 2000, the two decided they should work together. It started as event catering, but life took them in different directions. Bryce traveled, pursued roles both in and out of the restaurant industry, and continued developing his love of food, until finally the pair reunited. Realizing there were two pressing needs in the culinary scene off the Las Vegas Strip – namely there wasn’t an eatery where they could eat and drink among friends and there wasn’t a happening brunch spot – Bryce and Dalton set out to fix those issues. In 2010, DW Bistro opened as a neighborhood hub for friends and family to enjoy brunch, lunch and dinner. Throughout DW’s history, Bryce has served as the face of the restaurant, welcoming everyone in the doors, making them feel like the best of friends regardless if it’s their first or 400th time in, and continuing to make DW a Las Vegas hotspot everyone can enjoy.

Chef Dalton Wilson & Proprietor Bryce Krausman
  • As printed Imagine turning to your best friend and saying "Let's open a restaurant!"  That's exactly what founding chef Dalton Wilson said to his best friend (now of 25 years) Bryce Krausman.  The two embarked nearly 15 years ago to create what is now, the toast of brunch DW Bistro in the southwest part of Las Vegas.  Pictured here, is the culinary duo - this picture was taken the night before the pair opened their first location in April 2010.Having succeeded despite the oddities of the restaurant business, we find ourselves at the end of their 15 year run at The Gramercy.  "It's not forever, its for now," as Bryce oftens says.Join them for their BRUNCH FINALE SUNDAY April 6th at 12pm!  Toast to their success.

  • As printed Born in Jamaica and raised in New Mexico, Founding Partner Chef Dalton Wilson created a home in DW Bistro, where he could add some spice to the Las Vegas dining scene. Creating a menu full of vibrant and flavor-packed dishes, Chef Dalton introduced the essence of his upbringing in a new and approachable way with which Las Vegas locals and visitors alike fell in love. Throughout the years, different executive chefs and chef de cuisines have come and gone – each learning the DW way while imparting and leaving behind a few of their own flavors, takes and twists on the menu. And while DW Bistro is now a culmination of the hands and hearts of those that have played a part in the kitchen, Chef Dalton’s influence is still felt in many of the dishes today.
