One representative location per record: the accepted location carrying the most channel menus. Channel menus come from each provider's own store object for that store; prices are as each channel lists them, in the channel's currency; comparisons are projected from the resolved catalog -- one row per dish, portion-aware identity, prices kept as scoped offers -- and a pair the policy refuses is counted and explained rather than dropped.

Overall food cost (COGS)

Food Cost % = (Beginning Inventory + Purchases - Ending Inventory) / Total Food Sales xSay it's January: Beginning inventory (Jan 1): $12,000 Purchases during January: $28,000 Ending inventory (Jan 31): $11,500 Total food sales in January: $95,000 ($12,000 + $28,000 - $11,500) / $95,000 x 100 = 30.0% That 30% is your actual food cost. It captures everything the per-dish formula misses: waste, spoilage, overportioning, comps, staff meals, and yes, theft.$100.00

Formula 2: Actual food cost percentage (COGS)

Actual Food Cost % = (Beginning Inventory + Purchases - Ending Inventory) / Food Sales xFor a simple food-only period, food used equals opening inventory plus net purchases minus closing inventory. BCcampus explains the inventory procedure. Count and value stock consistently. Record purchase credits, transfers and staff-meal adjustments under a consistent accounting policy. Assume the following February inventory values and net food sales, with no transfers or separately recorded consumption adjustments: Beginning inventory (Feb 1): $14,200 Purchases during February: $31,500 Ending inventory (Feb 28): $13,800 Total food sales: $102,000 ($14,200 + $31,500 - $13,800) / $102,000 x 100 = 31.3% Food used is $31,900 and the ratio is 31.3%. The raw inventory calculation includes any food removed from stock. Waste, staff meals and complimentary dishes need separate records if you want to explain that use; it is not a receipt total or a measure of net profit. Tip Choose a consistent weekly or monthly period. Take both stock counts at the period boundaries and match purchases and net food sales to those dates.food cost percentage guide$100.00

Formula 2: Actual food cost percentage (COGS)

Working the formula backwards: menu pricing

$7.80 / 0.28 = $27.86 → round toThe $27.86 result is a cost-based price calculation, not proof of customer demand. Compare it with your labor, overhead and local market before setting the final price. A 36% steak and a 22% pasta do not have a fixed combined ratio. The result depends on both quantities sold and selling prices. Calculate total ingredient cost divided by total matching food sales. Try a price change in the DishCost sample menu to see the affected recipe costs. You can explore without an account.food cost percentage guide$28.00

Working the formula backwards: menu pricing
March 1, 2026 · Updated April 14, 2026Restaurant Operations Two formulas: per-dish food cost and overall COGS percentage. Step-by-step with real numbers, target ranges by restaurant type, and common mistakes. Two formulas run your restaurant's food cost. The per-dish formula tells you whether a menu item is priced right. The COGS formula tells you whether your kitchen is actually making money. Most guides cover one or the other. You need both.no price observed on any surface

March 15, 2026 · Updated October 9, 2026Restaurant Operations Use the right food cost percentage formula for a plate, inventory-based actual cost, or sales-weighted theoretical cost. Check each worked example. Plate food cost % = ingredient cost per portion / selling price per portion x 100. Actual restaurant food cost % = food used during a period / food sales in the same period x 100. A plate with $5.20 of ingredients and an $18 selling price has a 28.9% food cost. That leaves $12.80 before labor, overhead and other costs. It does not prove that the dish makes a net profit. Use plate cost for a dish, actual cost for inventory use, and theoretical cost for the ingredients expected from your sales mix. All prices below are illustrative USD assumptions, not supplier quotes or industry targets. Food sales exclude sales tax and alcohol; use the same categories and dates in both parts of each ratio.no price observed on any surface

The gap between ideal and actual

Benchmarks for 2026Under 28% 26% — Strong. Common for pasta and pizza concepts with lower-cost ingredients; see the full cost breakdown of a pizza. 28-32% 30% — Healthy range for most full-service restaurants. 32-35% 33% — Acceptable for premium proteins. Steak and seafood places live here. Keep it controlled. Over 35% 37% — You're probably losing money once labor and overhead are factored in. Tip These are food cost only. Add labor (typically 25-35% of revenue) to get prime cost. Keep prime cost under 65%. That's the number that tells you if your restaurant can stay open. For a full breakdown, see our guide on restaurant prime cost. Wholesale food prices sit 31% above pre-pandemic levels as of early 2026, and dining-out inflation is projected at 3.7% this year. Beef and veal alone are up 5.5%. If you haven't recalculated your food costs recently, your numbers are probably stale.no price observed on any surface
