Relationship evidence

Identity revision 1, last changed

  • a declared affiliated site is a relationship the publisher states, not common ownership
  • a declared provider account (gift cards, hiring, ordering) is a service relationship, not an affiliation
  • a register party at the business's premises is a candidate operator until the Place and legal resolvers bind it
  • a licensed operator of the business's premises operates those locations; it is not thereby the brand's owner
  • an employer a job board names on the openings posts them; it is not thereby the owner or the operator
  • an app's store seller or developer publishes the app; neither is thereby the restaurant's owner
  • a menu that names a producer names it; it is not a supply contract, a volume or an exclusivity
  • a mail or DMARC service domain in DNS is a technical service relationship, not an affiliation
  • a group the site says it is part of is a public affiliation; the equity chain and buying rights are separate questions
  • an organization that posts the openings, sells the app or holds a program account shares services with the business; that is not affiliation or ownership

Roles

  • As printed From storied Burgundy and Northern Rhône producers to small, family-owned wineries closer to home, Elizabeth is already bringing her perspective to Baltaire’s expansive wine program. For our latest Hospitality Hot Takes , we sat down with her to talk about the bottles she’s excited about now, what she wishes more guests knew about red wine, her approach to the perfect steak pairing, and what’s ahead for Baltaire. Q: What red wine are you most excited about on Baltaire’s list right now, and why? Elizabeth: We recently added the 2023 Stolpman “Great Places” Syrah from Ballard Canyon in Santa Barbara. I love supporting small, family-owned local producers who are making really traditional wines. What makes this one especially interesting is that it’s made from pre-clonal vine material originally from Domaine Auguste Clape’s Reynard parcel in Cornas in the Northern Rhône Valley, one of the region’s great Syrah producers. It’s such a unique project, taking this old vine material from France and growing it here in California. Syrah is a classic pairing with steak of all kinds, especially with our au poivre sauce. It’s also a red that isn’t too heavy to drink while the weather is still warm at the end of summer. Q: Is there a bottle, producer, region or varietal you think deserves more attention? Elizabeth: Red Burgundy. We have a huge selection at Baltaire, but most of our guests come in looking for either Bordeaux or Napa Cabernet. Because we’re a steakhouse, that makes sense, but I like to introduce people to our Burgundy selection because I think it’s really exceptional. Domaine Bruno Clair makes wine in Marsannay in the Côte de Nuits, and his wines offer really good value. We have several selections that are ready to drink now. For collectors looking to go big, we also happen to have one of the largest collections of Domaine de la Romanée-Conti in Los Angeles. Q: What red wine would you recommend to someone who usually drinks white wine? Elizabeth: Langhe Nebbiolo. It has really good acidity and freshness, so it’s still light and bright. Q: Are there opportunities to experience some of Baltaire’s more premium wines without ordering a bottle? Elizabeth: Absolutely. Our rotating Sommelier Selections by the glass give guests the opportunity to taste more premium wines by the glass than you’ll find at many restaurants. I always recommend taking advantage of those selections because you may have the opportunity to experience something like Château Latour or Hundred Acre by the glass . Q: Which wines would you pair with a filet versus a ribeye or Wagyu? Elizabeth: Filet is so lean that you have a much broader range of pairing options. Right now I’m loving Burgundy, so I would choose the 2023 Domaine Jean-Marc Millot “Version Nord” Hautes-Côtes de Nuits with a filet. With a ribeye, you want something with more structure, tannins and richness. My recommendation would be the 2016 Diamond Creek “Gravelly Meadow.” The rustic and earthy nature of the wine goes really well with the savory richness of a bigger, more marbled steak. Wagyu’s delicate flavors and strong umami profile call for both tannins and acidity, but something lighter than Cabernet. I’d recommend a Barolo like the 2012 Roberto Voerzio “Case Nere” Riserva . Q: What is the biggest misconception guests have about red wine? Elizabeth: Understanding the term “dry.” Dry can mean not sweet, but people also use it to refer to the tannic nature of a wine. When we talk about “dry,” it becomes a more in-depth conversation about how you want the wine to taste versus how you want the wine to feel on your palate . Those are two different things, and understanding that helps us guide someone toward what they’re actually looking for. Q: How do you guide someone who asks for something “smooth,” “bold” or “not too dry”? Elizabeth: Understanding the climate of specific places and the structure of different grape varieties really helps narrow it down. If someone wants something smooth, we might look for lower tannins or grape varieties with thinner skins. For something bold, we might look toward a warmer climate where the grapes ripen more thoroughly. Knowing how much maceration and oak aging is typical in a particular place or from a specific producer is also key. All of those things help us translate what someone means by “smooth” or “bold” into a wine they’ll actually enjoy. Q: What makes Baltaire’s wine list different from other Los Angeles steakhouses? Elizabeth: The breadth of our selections is massive, from classic regions all around the world to the depth of verticals and vintages we have from legacy producers like Domaine de la Romanée-Conti, Château Latour, Pierre-Yves Colin-Morey, William Selyem and Diamond Creek Vineyards . Many steakhouses keep their lists tight around Napa Cabernet and Bordeaux because that’s what’s expected. We have incredible wines from some of the best producers and regions in the world, with the goal of having something for every palate, budget and level of wine knowledge. We’re very fortunate to have the opportunity to continue growing those offerings. Q: Are there any recent additions, rare bottles or by-the-glass selections worth highlighting? Elizabeth: Dragonette Pinot Noir from the Sta. Rita Hills in Santa Barbara is a recent addition that we’re now pouring by the glass. They’re a great small, family-owned local winery, and the wine goes really well with all of our bar food offerings. We also just received our latest allocations from Domaine de la Romanée-Conti , which is very exciting. Q: What direction do you hope to take Baltaire’s wine program over the next year? Elizabeth: I’m excited to do some interesting activations over the holidays with wine pairings, large-format bottles, and special and rare bottles that you normally wouldn’t have the luxury of opening. I’m also really excited to continue building our inventory from heritage and legacy winemakers who represent the history and traditions of their regions. For Elizabeth, a great wine program is as much about discovery as it is about the classics. At Baltaire, a contemporary steakhouse in Brentwood, Los Angeles, that means preserving a deep collection of storied producers and vintages while continuing to seek out wines with a story to tell, whether they come from Burgundy, the Northern Rhône or a small family-owned vineyard in Santa Barbara. With Elizabeth leading Baltaire’s wine program, and new pairings, rare pours and large-format bottles ahead, there will be plenty more to discover. Amber Jamal Next Next

Dans le Cochon, Tout est BonInside Chef Jason Franey's Whole Pig Breakdown
  • As printed "In the pig, everything is good." It's an old French saying, but one that still guides Chef Jason Franey's approach to cooking today. Recently, the team gathered around a whole pig, not for service, but for something much more valuable: education. From prep cooks to chefs and even members of the front-of-house team, everyone participated in breaking down the animal from start to finish, learning not only how each cut is separated, but why understanding the entire animal makes better cooks. For Franey, the goal wasn't simply to butcher a pig. It was to preserve a culinary tradition that fewer kitchens practice today. "I wanted to get everyone together in one room to cook, to teach technique, to introduce charcuterie, and to show that nothing should go to waste, from the skin, to the bones, to the head." Although Chef Jason Franey built his career in fine dining, whole-animal butchery wasn't something he encountered in most professional kitchens. "When I was coming up as a sous chef, restaurants weren't receiving whole animals because there wasn't much use for the lesser-known cuts," Franey says. "It was something I explored on my own. I became fascinated with charcuterie in the early 2000s and largely taught myself. It's an old craft that really interested me, especially the philosophy of nose-to-tail cooking." Today's kitchens often receive neatly fabricated cuts, trimmed and portioned before they ever reach the restaurant. While efficient, that convenience can leave cooks disconnected from the ingredients they're preparing. "There's a reason the tenderloin is the most tender cut, and there's a reason the shoulder is the toughest. You have to understand where those muscles come from, how they work, and where each cut lives. Otherwise, you can easily cut into something that's incredibly valuable." Beyond proper butchery, each cut offers different textures, flavors, and fat content, requiring different techniques to bring out its best qualities. Ask any chef what it means to "respect the animal," and you'll likely hear a similar answer. For Franey, it's simple. "Respecting the animal means not wasting it." Every edible piece has a purpose. Bones become stock. Tougher muscles become handcrafted sausages. Bellies are cured into pancetta. Back fat becomes lardo. The head is transformed into head cheese. Even the liver, heart, and kidneys were incorporated into sausage. "If it's edible, we find a use for it." Nothing is wasted. The process began by removing the head before splitting the carcass into two equal sides. From there, each primal cut was carefully separated and assigned a purpose. The Boston butt and picnic shoulder became house-made sausages, including boudin blanc, chorizo, and smoked andouille. The belly was cured into pancetta while the skin became crisp chicharrón. The pork rack is currently dry-aging before appearing as a Kauboi special, while the loin will also age for two weeks before being Frenched, and roasted on our custom wood fired grill. House-made lardo will be created from the cured back fat. Even the tenderloins found an unexpected second life. After curing and smoking them above the fire for five days, they'll be shaved over sushi. Most diners recognize pork chops, ribs, and tenderloin. But Franey enjoys introducing his team to the lesser-known cuts hidden throughout the animal. "The Hollywood cuts are what everyone already knows. But then there are cuts like the secreto, the pork skirt steak, and the St. Louis ribs that come off the belly. Seeing exactly where those cuts come from, that's the learning experience." It all comes back to the French saying that inspired the day. "Dans le cochon, tout est bon." Everything on the pig is good. The experience wasn't just for the kitchen staff. Franey wanted everyone, from prep cooks to line cooks and even members of the front-of-house team, to better understand the work that goes into every plate. "This is an art that's not really practiced anymore. Years ago, restaurants received whole animals because that's what was available. Today we can order almost any cut we want. But knowing how to break down an entire animal, and knowing what to do with every single piece, is a craft." That knowledge ultimately makes everyone better at what they do. When cooks understand the anatomy of an ingredient, they make better decisions in the kitchen. They waste less. They appreciate the value of every cut. And they develop a deeper respect for the ingredients they're entrusted with. Craftsmanship has always been at the heart of great cooking. A chef isn't simply someone who follows recipes. A chef is a craftsman; someone who studies technique, understands ingredients at their source, and continually refines their skills through repetition and curiosity. While modern kitchens have become faster and more efficient, craftsmanship remains timeless. It's found in knowing how to break down an animal by hand, cure meat with patience, transform overlooked cuts into something extraordinary, and ensure that nothing goes to waste. Those skills don't just create better food, they build better chefs. And ultimately, they make better restaurants.

Fernando TrivisonnoWINE DIRECTOR
  • As printed Born and raised in Argentina, Fernando Trivisonno is a strong believer in the connection between wine and artistic expression. He moved to Los Angeles with his family in 1989, and seeking a challenge, took his love of good food and wine and turned it into a career in the hospitality industry. Previously, Trivisonno worked as the sommelier at 55 Degree Wine, as well as at The Red Room, widely popular among patrons for its wine program. In 2018, he accepted the role of sommelier of Mora Italiano, the newest concept from Alliance Hospitality Group, where he focuses on pairing wines from around the world with Italian cuisine, based more on structure rather than flavors and region. He also chooses wines for guests by interacting with them, making selections based on their personality as well as preference. An educated and accomplished level three sommelier, Trivisonno's certifications include Certified Specialist of Wine from the Society of Educators, and completion of wine programs from the Court of Master Sommeliers and the Wine & Spirit Education Trust. Trivisonno currently resides in the San Fernando Valley and has three children. In his spare time, he enjoys listening to classical music and reading books.

One representative location per record: the accepted location carrying the most channel menus. Channel menus come from each provider's own store object for that store; prices are as each channel lists them, in the channel's currency; comparisons are projected from the resolved catalog -- one row per dish, portion-aware identity, prices kept as scoped offers -- and a pair the policy refuses is counted and explained rather than dropped.
