Here’s what we know about the bar license process.\n\nFirst things first: what is a liquor license?\n\nA liquor license is essentially a piece of paper that demonstrates that you, as the owner and proprietor of an establishment that sells alcohol, are aware of the regulations and restrictions you must adhere to in order to do so safely and legally.\n\nDepending on where you are in the world, your liquor license may tell you who you can sell alcohol to, when, what kind, and how many units per person in a given service period. It may also stipulate requirements such as how often you need to renew, and what you can and cannot do with the half-fulls and empties once your doors are shut for the day.\n\nThe application process is not always straightforward, and will differ greatly depending on where you are in the world. Here are a few critical things to keep in mind.\n\nTo get a liquor license in most states, you will need:\n\nMost states will also require an amount of personal information from the proprietor, and a background check is almost always mandated.\n\nInformation you should expect to provide on your application includes:\n\nMost states require regular bar license renewal, which will involve similar (very pared down) paperwork and fees.\n\nDifferent states and even county governments have very different relationships to alcohol and alcohol service which determine when, where, and what types of alcohol you can sell, if you can sell them at all.\n\nThere are currently 83 “dry” counties in the U.S . in which the purchase and sale of alcohol is prohibited. However others allow alcohol consumption on public streets, and there exists a range of regulations or lack thereof in between at the county level, and all have different policies regarding the qualifications you must hold and stipulations you must meet in order to hold a liquor license of any kind.\n\nGet in contact with your local bar licensing unit to learn more about specific requirements in your area.\n\nOn-licenses are distributed to establishments where alcohol sold is meant to be consumed on the premises, such as bars and restaurants. Off-licenses are given to stores where alcohol is meant to be taken home, such as liquor and grocery shops.\n\nA typical restaurant or bar generally will need an on-license to serve alcohol to their patrons. Mobile establishments, such as food trucks, can obtain temporary or event licenses which also allow them to serve alcohol, depending on the state.\n\nSome states have upwards of 20 different classes of liquor license you might apply for. Bartenders, bussers and servers rely on management to schedule staff, track and stock inventory and run payroll to keep their jobs functional. And this sometimes tedious task falls to management to make sure that competent, well-trained employees are showing up to do their part when needed. And keeping and updating your manual over time will allow you to perfect the flow and technique of your bartender training protocol.\n\nOne shortcoming of bartender training manuals is that they have to be used in order to be useful, and you may have to apply a little pressure to your bar managers if you believe in the training document you’ve produced. Plus, handbooks can be useful for your employees who learn best through reading and self-direction.\n\nDifferent states have different requirements for earning bartender certification, but all states do require some level of official training and even licensure for anyone serving or handling alcohol within a public-facing bar or restaurant. Make sure any bartenders you want to hire have all their paperwork in hand. That’s why many bars and restaurants are now choosing to implement a tip-splitting policy to make sure everyone contributing to an excellent guest experience gets to share the love.\n\nBut tip calculations can be a complex and difficult calculation to make, especially as a nightly task in your bar. Legal considerations, questions of equity and fairness, and your exact tip-splitting methodology are each important factors which may change how you choose to handle this process.\n\nIf all else fails, you might try using a custom tip-splitting template to help you work through the details. If you prefer the long way around, here is everything you ever wanted to know about tip-splitting: what it means, how it works, and why you should use it in your bar.\n\nTax professionals at the IRS define a “tip” as a non-compulsory extra-salary (not part of their typical hourly or salaried rate) payment given by a customer to a service worker within the hospitality industry.\n\nTips may be given directly to the worker by the guest, or it may be distributed between employees via a tip pool into which all customer gratuities are placed. Tips can come in a number of different forms, including:\n\nTypically, the amount of tip given is calculated as a percentage of the overall cost of the food and/or drinks paid for during a customer’s stay. 15% is considered the minimum in many establishments for good service, with generous tippers leaving between 25 - 50%.\n\nIf the overall bill for a given group was $100, and they wanted to leave a 20% tip, they would calculate is like this:\n\n100 x .2 = 20\n\n20% of 100 is 20, so the tip amount is $20. The total for this bill overall including tip would then be $120.\n\nThe U.S. Department of Labor (DOL) stipulates that employers can require tipped staff to share their tips with non-tipped staff only if all employees are being paid at or above the minimum wage rate: $7.25 federal, varied local.\n\nThe DOL also states that, if employees are tipped, an employer may take a “tip credit” up to a certain percentage out of a tipped employee’s hourly wage. The tip credit cannot exceed the actual amount the employee was tipped, and cannot exceed $5.12. The employer must also inform employees truthfully whether or not they are claiming the credit. If an employer chooses this route, they may not hold any tips or ask tipped employees to share their extra-salaried income.\n\nIf they ask tipped employees to share their tips with non-tipped employees, they may not take a tip credit.\n\nThe terms “tip pooling” and “tip sharing” are often used interchangeably, however they describe two different tip-splitting processes which may function more effectively depending on the needs of the establishment in question.\n\nTip pooling is an employer-mandated process which is beholden to the DOL’s tip splitting laws outlined above.\n\nWith tip pooling, employees collect a certain number of tips which the employer then splits between both tipped and non-tipped employees based on a metric of their choosing. Most commonly, these are based on hours worked, an established points system, or defined hierarchies within the bar or restaurant.\n\nTip sharing is a completely voluntary action which employees may either agree to or disagree to. To-go containers and cutlery are generally reserved for food items. But in some states, patrons can get pre-made cocktails to go from their favorite bars and restaurants. If your establishment is in one of these states, consider offering takeout Toddys etc. to your loyal customers. Mixers should include tonic, seltzer, cranberry, orange, and grapefruit juice, ginger ale, cola, grenadine, and cream, among others.\n\nGarnishes.
